What is the point of letting people set the color theme when you hardcode the pages to some damn color? This page is TOTALLY UNREADABLE in my default color set, black letters on a black background, presumably because some idiot hardcoded it to a damn color!
I don't think multiple colour themes are a good idea for something like a wiki. Not all pages are just text and a few pictures or bullets. Some pages require tables and other 'advanced' elements. It is difficult to design something to look nice in multiple styles.
